Monthly Recipe - Crepes Suzette

With Shrove Tuesday only a couple of days away, we thought we would dedicate this month’s recipe by celebrating one of the world’s favourite dishes... pancakes, Palazzo style.
Makes 3 pancakes:1 egg - ¼ pint of milk - 55g flour - 1 cup orange juice - ½ cup maple syrup - Dash Gran Marnier or Cointreau
1. In a bowl lightly whisk the egg then fold in the flour a little at a time so not to make the mixture lumpy.
2. Add the milk alternatively with the flour until all ingredients are combined, then stir in a pinch of salt.
3. Traditionally the batter is meant to be left to rest in the fridge for 30minutes, however most people are too excited to wait that long, so feel free to cook these straight away!
4. Heat up a small non-stick frying pan with a little olive oil. Once the pan is really hot add a ladle of batter mix to the pan. As the mixture cooks free the edges of the pan cake away from the pan with a fish slice. Once you have bubbles appearing on the top of the pancake gently flip it over and cook the other side. Only the brave dare to flip there pancakes in the air!!
5. Meanwhile in a small saucepan reduce the orange juice by half then add the maple syrup and Cointreau.
6. No for the fun part... place the pan cake on a plate, pour over a little of the sauce, roll them up and enjoy!!
